SKEMA alumni Antony Giordano, Ava Maisani Casanova, Charles Cagnac, and Alexandre Rafaitin are on cloud nine. This team of young entrepreneurs, co-founders of the fast-food restaurant Père & Fish, recently won the prestigious La Bourse Badoit 2018 award. They had presented their novel concept of fast food specializing in gourmet fish burgers. The team aims to popularize and reinvent this humble dish and has developed original recipes, which made the judges fall in love with it.
For this 31st edition of the competition, the jury comprised of experts from the food industry chaired by Michelin-starred chef Thierry Marx. The winners will receive €10,000, one year of coaching on communication, cooking and management by jury members including Thierry Marx & Hervé Cuisine, one-year free supply of Badoit / Evian, legal support from LegalVision, and integration into the incubator program of Emergence Concepts.

Focus on sustainability
One of the aspects that drives the founders is the desire to commit to sustainability and preserving the marine ecosystem. This is why, during their incubation with SKEMA Ventures, they have come up with an innovative business model that involves ensuring that the fish used at the restaurant is fresh and has been acquired mostly through sustainable fishing. The ingredients for the side dishes are also produced through sustainable farming techniques.
